White Chicken Chili

In the Crockpot

2lbs boneless skinless chicken breast

1 diced yellow or red Onion

2 tablespoons of minced garlic

24oz Chicken Broth (Low Sodium) 

2 15oz cans Great Northern Beans (drained and rinsed)

2 4oz can Diced Green Chiles (both mild)

2 15oz cans Whole Kernel Corn (drained) 

2tsp Cumin

2tsp black pepper

3tsp chili powder

2tsp red peppers

2tsp red crushed pepper

8oz fat reduced cream cheese

½ cup of half and half 

  1. Add chicken breast to the bottom of the slow cooker, top with all of the seasonings listed above

  2. Top with diced onions, minced garlic, great northern beans, green chiles, corn and chicken broth

  3. Stir everything together then Cover and cook on low for 8 hours or high for 4 hours

  4. Once its finished take the chicken out and shred the chicken in to fine pieces 

  5. While the chicken is out add the cream cheese & half and half stir that up good and let the cream cheese melt! 

  6. Add the chicken back and let it cook on high for about 30 minutes.. Cook some cornbread while you are waiting if you please. 

  7.  Enjoy your white chicken chili!
